Job Title

Position (job title): Executive Sous Chef

Reports to: Executive Chef

Location:  Aldwark Manor Estate, Aldwark, Nr. Alne, York, YO61 1UF

Hours of work:  46 hours per week

As Executive Sous you will be overall responsible for All Kitchens and its team members in the absence of the Executive Head Chef, directing all kitchen activities and ensuring the preparation of our delicious food - helping create memorable experiences for guests - whenever and wherever they dine. You’ll also ensure the food quality, kitchen maintenance and inventory functions are kept to the highest standards - to make sure the department is always running smoothly.

You will lead and inspire everyone with coaching and mentoring the team to be their best. The main purpose of the role is to manage the quality and food production of all catering, lead and inspire the team to deliver the highest standards and ensure legislative requirements are met.

Main Duties:

  • Ensuring that the financial targets of the department are being met
  • Support with Health and Safety stator requirements being delivered consistently.
  • Ensure kitchens are covered to meet business needs flexing payroll when required
  • Support with controlling and directing the food preparation process.
  • Managing and working closely with other Chefs at all levels to develop and lead teams.
  • Maintaining / raising the food’s profit margins consistently
  • Excellent cooking skills with a strong understanding of produce and ingredients.
  • Determining food inventory needs, stocking and ordering. Liaising with suppliers for food orders.
  • Creating menu items, recipes and developing dishes ensuring variety and quality.
  • Strong communication skills through a variety of means: departmental meetings, HOD meetings, Function sheet meetings, Health and Safety meetings etc..
  • Flexible and adaptable, with the ability to stay calm under pressure, adapting your approach to complete routine and non-routine tasks.
  • Exceptional organisation and planning skills through Standard operating procedures. High attention to detail and accuracy – great at managing one’s own time and the time of the team
  • Deputise for Executive Head Chef in absence.
  • Interviewing and hiring of new Chefs as required.
