A DAY IN THE LIFE OF A SOUS CHEF AT THE ABERDEEN ALTENS HOTEL

What you'll be doing...

Reporting to the Head Chef , you can expect your working day to include the following duties.

  • Assisting the Head Chef in managing the kitchen operations and deputising in their absence.
  • Prepares and serves a range of dishes, whilst supervising junior members of the Kitchen team.
  • You will assist the Head Chef to create and develop all our menus ensuring they are creative and seasonal. Including special event menu development and prepare allergen charts for all menus.
  • Manage measures to control payroll and food cost.
  • Assist with regular internal self-audit to comply with Fire, Health & safety, and Food Hygiene. 
  • Assist with purchasing and stock control.
  • Assist with training and coaching the kitchen team. Prepare staff rotas. Conduct regular trainings and reviews and provide constructive feedback to ensure quality of product and service.
  • Effectively communicate with F&B and the Sales Team to ensure seamless day to day operations.

WHAT WE NEED FROM YOU

To succeed in the role of Sous Chef you will need the following qualities and skills. 

  • The ability to adhering to the company’s rules and regulations on policies and procedures relating to fire, hygiene, health & safety, and licensing regulations
  • The ability to manage various sections of the kitchen, whilst ensuring health & safety standards are met
  • To be flexible in your approach, and able to assist the Head Chef and any other members of the kitchen brigade when required 
  • A team player who thrives in the hustle and bustle of a busy kitchen department 
  • Someone who is passionate about food and willing to learn 
  • Previous experience in a similar role.
  • An understanding of quality control and kitchen standards
