Your purpose
As Food and Beverage Manager, you will lead and coordinate the F&B teams across all three Houses (19, 20 and 21) as well as Private Parties, ensuring that exceptional service standards are consistently delivered. Service standards
● Develop a rapport with members by spending plentiful time in each area of the House and maintaining a five-star standard of service and product.
● Develop menus with a best in class approach to our offering whilst maintaining the budgeted GP margin percentage. Liaise with the Head Chef on food menu development, with the Bar Manager on cocktail menu development, with the Head Sommelier on all wine matters and the H19, H20, H21 and Private Parties HODs regarding their specific setup and area of responsibility.

● Ensure our Standard Operating Procedures and Steps of Service are updated and followed to ensure the team is equipped with the knowledge to provide excellent service to members and guests.
● Have complete knowledge of facilities, room rates, promotions and hours of operation across both Home House and Home Grown so that you and the team can positively approach bedroom, room service and F&B outlet sales opportunities.
● Ensure the team positively approach sales opportunities in order to maximise revenue by making informed recommendations based on in-depth knowledge of the menus (including preparation techniques and accompaniments).
● Set and maintain correct stock levels, purchasing within budget constraints and oversee the stock management process with Finance and/or the Purchasing department.

Team management

To motivate, inspire and lead the team to deliver strategic objectives.

To identify, research and analyse new areas of revenue opportunity, i.e through private events or themed events.

Ensure all the team understand and practice the art of "upselling" to maximise secondary spend opportunities.
Ensure that company financial regulations are adhered to in terms of payment processing and reconciliation and invoice processing.
Ensure staff understand and adhere to licensing regulations.
To assist the General Manager in providing appropriate staff training and development.
To ensure sufficient staff are available for the safe, high quality functioning of the Clubroom.
To assist in the management of the Clubs quality assurance systems and procedures.
To ensure all cleaning is completed to meet company standard and legal requirements.
Liaise with maintenance colleagues, as and when maintenance is required.
To act as a key holder for the Club, as and when required, and be responsible for opening and closing of the building.
To undertake any regulatory requirements.
Act as Duty Manager ensuring that a safe and efficient service is provided for guests.
To undertake any other duties as may be required by the General Manager to ensure that the business objectives of the club are achieved.
THE CANDIDATE
Qualifications
The post holder will preferably hold a recognised qualification in Catering, or related subject, first aid certificate and Food and Hygiene Certificate along with strong knowledge of the Leisure or related industry in a medium sized enterprise.

Must be eligible to hold required licences on behalf of the Company.
Must be able to build strong relationships with customers, clients and employees.
