The Phene is a historic pub in the heart of residential Chelsea with a passion for seasonal British food, top-notch levels of service, and a real attention to detail.

Split over four floors, The Phene boasts a leafy terrace garden, three private dining rooms, a restaurant, and two relaxed bar spaces. We host over a dozen events and functions a week, keeping us buzzing and vibrant throughout the year. Last year alone, we hosted over 220 weddings.

Established in 1853, The Phene has recently become part of Young's, a fittingly historic partner, and we're looking forward to a new and very exciting chapter.

What we are looking for in our Senior Sous Chef:

We are looking for an existing Head Chef or experienced Sous Chef looking to take a next step into a busy and highly regarded premium food venue, where the kitchen is at the heart of everything we do.

We average 13 events a week, around £20K in weekly food sales (and more than double that in December!). We take pride in making everything fresh, in-house, to a consistently high standard.

We offer our guests an all-day a la carte, a choice of two set menus for events, a canapé menu, and a Sunday menu of premium roasts, all from a fairly compact kitchen.

This role requires excellent leadership, brilliant organisation, and real commitment, making it the perfect proving ground for any chef aiming to become a serious Head Chef.

We're looking for someone who considers themselves a natural leader with a passion and flair for producing quality fresh food in an environment that makes people feel welcome. As the successful Senior Sous Chef, you will:

  • Have experience championing excellent service through quality food.
  • Demonstrate a passion for leading and developing a team.
  • Be an active hands-on Chef with excellent communication skills.
  • Be responsible for managing the kitchen staff rota, training, and health and safety effectively at all times.
  • Work alongside your Head Chef to design and deliver new dishes for our menus and daily specials.
  • Demonstrate great planning and organisational skills to maintain effective controls regarding GP and labour.
  • Have a proactive approach to driving sales and growth through engagement with both kitchen and front-of-house teams.

We burst onto the restaurant scene in 1997, when we shook up London and showed the UK a new way of eating. Part of this was the 'kaiten' conveyor belt and colour-coded dishes which made our name. We're all about fresh, flavoursome, authentic Japanese food. Sushi is what we're famous for, but we also have a mouth-watering range of hot street food available - from traditional classics to innovative fusion dishes. All packed with rich, aromatic flavours and umami. Fast forward to today and we have over 70 restaurants all over the globe, more than 300 kiosks in the UK, with grocery products and pre-pack sushi in most major UK supermarkets. The Sous Chef is responsible for delivering a great experience for both our team and guests You are passionate about our food and will support the whole management team across the restaurant. Happy teams and Happy guests is the mantra by which you live and instil this modus operandi across the team. You run fantastic shifts engaging with both our team and guests ensuring that only the best food is served. You develop the team to Super Squad status and have an understanding of all aspects of the business. You are comfortable and natural in all sections of the kitchen, you cut fish, cook rice, roll sushi, and prepare our kitchens every day. You are striving to continually improve the food you serve, whilst being committed to delivering a safe kitchen / restaurant environment for your team & guests.

Job Description

The Role:

Whether you’re creating a traditional Sunday lunch, presenting our popular afternoon tea or creating a menu for one of our themed nights, as our Sous Chef you’ll deliver food that keeps our customers coming back for more.

With a newly created menu for each season, the menu is modern yet full of classical English charm. The elegant décor and relaxed atmosphere make the perfect setting for a unique and special dining experience.

As the Sous Chef  you'll work closely with our Head Chef to produce consistently outstanding food during service, you’ll also assist with everything from stock rotation and the implementation of new menus to ensuring HACCP guidelines are being followed.

Whether you’re mentoring and developing junior members of the team or stock ordering in the absence of the Head Chef you will be a vital member of this small, talented team.

The Ideal Candidate will be:

  • passionate, approachable and friendly Sous Chef, with 2 or more years’ experience in a similar role, with a background in fresh food cooking.
  • have the ability to lead, motivate and deliver high standards of service with a genuine and approachable manner.
  • will be an organised individual who is able to effectively plan, communicate and lead the team in the absence of the Head Chef.
  • Ability to demonstrate a wide range of cooking techniques and skills that the team can learn from.  
  • Qualified to Food Hygiene Level 2  
  • Knowledge of special dietary requirements  
  • Practical experience in all kitchen areas  
  • Good communication skills, both written and verbal  
  • Ability to work unsupervised and in a multi-discipline team   
  • Previous experience of working with a team and developing and coaching them to use new techniques and skills in order to create exceptional dishes for our customers
