Key Responsibilities:
- Lead, mentor, and manage the entire kitchen brigade, ensuring high performance and professional development.
- Create innovative, seasonal, and profitable menus for all outlets (fine dining, banqueting, room service).
- Oversee all aspects of food preparation, cooking, and presentation to the highest standards.
- Manage kitchen budgets, including food costs, labour costs, and inventory control, to achieve financial targets.
- Source high-quality ingredients, building strong relationships with suppliers and negotiating favourable terms.
- Ensure strict adherence to food safety, hygiene, and sanitation regulations (HACCP).
- Develop and implement standard operating procedures for all kitchen operations.
- Conduct regular performance reviews and provide constructive feedback to kitchen staff.
- Collaborate with the F&B Manager and management team on menu planning, special events, and marketing initiatives.
- Maintain impeccable cleanliness and organisation of the kitchen and storage areas.
Qualifications:
- A minimum of 10 years of progressive culinary experience, with at least 5 years in an Executive Chef or Senior Sous Chef role in a high-calibre hotel or restaurant.
- Formal culinary qualifications from a recognised institution.
- Exceptional leadership and team management skills.
- A deep understanding of classic and contemporary culinary techniques, pastry, and diverse cuisines.
- Strong financial acumen, with proven experience in managing food costs, labour costs, and P&L.
- Excellent knowledge of food safety regulations and HACCP principles.
- Creative flair and a passion for delivering outstanding food quality and guest experiences.
- Strong organisational and time-management skills.
- Ability to work effectively under pressure and maintain composure in a fast-paced environment.

- Previous lecturing experience for similar courses
- Experience supervising student work and providing support and feedback
- Experience teaching in the wider subject area
- Experience with distance learning and supporting learners both online and face to face.
- Professional conduct in all interactions with staff and students
