We're currently recruiting an ambitious Chef to help us create exceptional food experiences for Defence on a full time basis contracted to 37.5 hours per week. As a Chef, you will be responsible for preparing and serving the kind of food that truly brightens our clients' and customers' days, all within the market-leading food service company in the UK. Opening next month on Green Street, The Welly is the latest venture from the team behind Somer Valley Brewing & Farms. Taking over the old Belushi’s site, it’s set to become Bath’s new go-to for truly local beer and food.
Brewed with barley grown on our own farm and water from our borehole, our beers are as local as it gets. The kitchen, led by Head Chef Peter Lewis (Bunch of Grapes, Henry’s), will serve seasonal small plates using produce from our farm – with a nose-to-tail, zero-waste ethos guided by our in-house butchery team.

About The Role
We are seeking a dynamic and experienced Sous Chef to manage the kitchen operations in our beautiful, new independent taproom & kitchen in the centre of historic Bath.
The ideal candidate will possess a strong background in professional kitchens, with a proven track record in leadership and operational excellence. This role requires a hands-on approach to ensure the highest quality of service and food safety, while also fostering a positive work environment in the absence of the Head Chef. A passion for locally sourced food is essential.
Responsibilities
Managing operations within our kitchens located in The Welly (Bath) and Somer Valley Farms production kitchen (Peasedown St John).
To include but not limited to -
- Maintaining food production, food safety standards including knowledge of allergens and food quality checks.
- Supervise and support team members within the kitchen to ensure training is planned and completed.
- You will ensure that stock is managed effectively and efficiently whilst adhering to food and hygiene guidelines.
- Administration tasks involving supplier orders, menu development, mise en place lists and recipe and menu breakdowns.
Experience
- Proven experience in professional kitchens, preferably in pubs and restaurants and at least 2 years as a Sous Chef.
- A natural leader with proven management/supervisory experience along with effective communication skills with the ability to motivate and develop the team.
- Strong culinary skills with the ability to work under pressure while maintaining attention to detail in a fast-paced environment.
- Be able to resolve issues whilst maintaining professionalism and safe production standards.
- You will need to embrace the company’s ethos and encourage the farm to fork, nose to tail dining initiative.
