Key Responsibilities:

  • Collaborate with the Kitchen team in the daily preparation and production of dishes, including starters, mains, and desserts.
  • Uphold rigorous standards of hygiene, cleanliness, and food safety to guarantee the utmost quality and freshness.
  • Contribute to the efficient operation of the kitchen, helping with tasks such as preparation, plating, and garnishing.
  • Follow recipes and guidance from senior chefs to ensure consistent quality and presentation in all dishes.
  • Show eagerness to learn and develop new culinary techniques and skills and the ability to thrive in a fast-paced, high-pressure kitchen.

Qualifications

  • Previous experience as a Commis Chef or in a similar role within a professional Kitchen.
  • Passion for pastry desired but not compulsory
  • Strong desire to develop culinary skills and knowledge.
  • Good understanding of techniques and kitchen operations.
  • Strong attention to detail and ability to work efficiently in a fast-paced environment.
  • Good teamwork skills, with a willingness to take direction from seniors.
  • Training or certifications are a plus.

This hybrid role combines on-site kitchen management with remote administrative and digital platform oversight, ensuring smooth day-to-day performance, excellent customer service, and tight operational control.

You will be responsible for everything from managing online food delivery platforms to overseeing stock ordering, food waste reduction, rota scheduling, and coordinating financial reporting with the accountant. This is a unique opportunity for someone who thrives in a fast-paced, modern food business environment and is equally comfortable in a kitchen and behind a laptop.

Key Responsibilities:

Online Platform & Virtual Brand Management (Remote & On-Site):

  • Manage and optimize online delivery platforms (e.g., Deliveroo, Uber Eats, Just Eat)
  • Monitor and adjust menus, pricing, availability, and promotions across all brands
  • Track online performance metrics and service levels to maintain top ratings
  • Handle customer issues or reviews requiring management attention

Stock & Inventory Control (On-Site):

  • Plan and place weekly stock and packaging orders with approved suppliers
  • Track inventory usage and implement systems to reduce food and ingredient waste
  • Ensure stock rotation, proper labelling, and inventory logging practices

Staff & Rota Management (On-Site & Remote):

  • Create and manage staff rotas, balancing labor costs with demand across multiple brands
  • Support hiring, onboarding, and training of kitchen staff
  • Supervise staff performance and handle scheduling conflicts or short-notice absences
  • Conduct occasional team meetings and briefings (virtual or in person)

Financial Coordination & Admin (Remote):

  • Liaise with the external accountant to submit and verify weekly/monthly wage data
  • Track wage spend, hours worked, and labor cost ratios
  • Submit operational reports including sales summaries, food cost, and waste data
  • Assist with reconciling platform payouts and resolving discrepancies

Operations Oversight & Compliance (Primarily On-Site):

  • Ensure that all kitchen operations meet cleanliness, hygiene, and health/safety standards
  • Troubleshoot daily issues, support brand launches, and oversee kitchen workflows
  • Conduct quality checks to ensure consistent food presentation and packaging standards

Qualifications:

  • 2+ years of experience in food service or kitchen operations management
  • Proven experience working with online food platforms and delivery systems
  • Strong understanding of stock control, food cost, and labor cost management
  • Tech-savvy with ability to work remotely on scheduling, reporting, and online platforms
  • Excellent leadership and interpersonal communication skills

Key Accountabilities

*    Working with the Senior Team to ensure the food is delivered to the highest standard in the section of responsibility

*    Coach and develop CDP’S and Commis Chefs to ensure their skills are being enhanced, leading by example

*    Check the Section for standards regularly ensuring that all audits and temperature checks are completed

*    Take ownership of the stocktake and feedback any key indicators to the Head chef

*    Pre-empt any pinch points within the kitchen, and highlight them to your line manager

*    Work with the Senior Chefs to help produce monthly reporting for the Kitchen

*    Work closely with the Restaurant team to ensure a collaborative partnership between front and back of house

*    Communicate effectively ensuring that the teams are aware of the menu

*    Demonstrate high levels of planning, organising, and time management to drive the operational execution across the section

*    Ensure adherence to company policies, controls and standards (e.g. due diligence, cleanliness, and HSE)

*    Monitor and maintain inventory, ensuring these are highlighted to the Senior Chefs

*    Deliver feedback and coach the team on a regular basis, ensuring achievement is recognised by the senior team

*    Identify training needs of your team

We expect the successful candidate to have the following skills and experience:

*    Experience as a Sous Chef within a quality restaurant.

*    Willing to learn and grow as well as teach

*    Passionate about food

*    Have excellent longevity with your past employers

*    Maintaining Food Safety standards

Job Description

Our Royal Exchange satellite bar & restaurant is located in the heart of Bank. This bustling London location is within walking distance to plenty of bus stops, as well as Bank station. There is plenty to do and explore in this area and just a hop, skip and a jump to the London CBD.

Taking pride of place at the Royal Exchange Courtyard in Bank, the Fortnum’s Restaurant and Bar is one of London’s most Instagrammable restaurants. Serving a luxurious selection of fine caviar and oysters to hand carved smoked salmon with our very own selection of cocktails. The restaurant serves breakfast, lunch, dinner and afternoon tea 5 days a week.

We are currently looking for an experienced Sous Chef at Royal Exchange Restaurant and Bar. This is an exciting position for a Bartender looking to develop their knowledge in the finest beverages that we offer.
